I didn’t plan on posting a recipe today but as I was throwing this salad together for lunch, I thought I’d go ahead and share it! My two favorite ways to use up leftovers is in soups and salads. I only had a little chicken left, which wasn’t enough for dinner but the perfect amount for a quick, healthy lunch.
