You can see my first one about Breakfast Burritos. I made two batches in preparation for back to school and I was thankful to have breakfast ready to go on this week. So per my daughter’s request, I made Burrito Bowls and there was just enough left for me to have one for lunch on Wednesday. My supply is very low.

We ate leftover ham & bean soup, kielbasa, and whatever we felt like eating. Tuesday: I made Burrito Bowls using leftovers from Monday night. Thursday : Pork tenderloin wraps with leftovers from Wednesday night. Sunday: We were still snowed in, and thankfully, we had plenty of food. The sale price was $2.77

Chicken, Pinto Beans & Rice Casserole

I had a lot of beans and rice leftover (the chicken was devoured at dinner), so I used it as a filling for burritos the next day. Thanks for reading. If you don't have pinto beans, replace them with another bean, such as red or white or black or chick peas. Cooked pinto beans were in my freezer, so that is what I grabbed.
