What We Ate Saturday French toast: an Easy Button dinner. Tuesday Zoe was out with a friend, so I put my PJ pants on, watched a bunch of assigned lab videos, and ate leftover soup for dinner. Wednesday I had lab from 5:30-9:30, so it was Zoe’s turn to eat leftover soup! What did you have for dinner this week?

Monday Something good happened, which I will tell you about later, and Zoe and I celebrated by going to a bubble tea place for dinner. Tuesday We had too many leftovers in the fridge (happens in a jiffy with just two people!)

I felt a little stumped about what to make for dinner, and I stopped at Safeway rather aimlessly, hoping for inspiration to strike. and then I went home and made an alfredo sauce for pasta, with some kale and leftover ham mixed in. Wednesday I had leftover broccoli salad + pasta, and Zoe had tomato soup and a grilled cheese sandwich.

Sunday Leftover sandwiches; they’re great reheated in the toaster oven on the air-fryer setting. Monday I had a snacky dinner earlier, and then when Zoe came home from her evening shift at work, she had a frozen pizza.

Tuesday I sauteed some ham from the freezer, then sauteed some chopped kale, then added in leftover mac and cheese plus some milk and cream. Wednesday I had a nursing orientation event that went into the evening, so I didn’t cook dinner. Friday We have some leftover chicken, so maybe I’ll do something with that for dinner.

What We Ate Saturday Zoe was at a gathering with a friend, and I made myself some whole-wheat blueberry pancakes for dinner.
