They all rewards that were for Thanksgiving ingredients that were on my grocery list, so I wasn’t buying things that I didn’t need just to get the deal. I roasted my free turkey that I received from Giant and as you’ll see below I used the meat and stock through out the week for my meal planning.

Thursday: Thanksgiving. Saturday: I am roasting a turkey for my family, mostly for the leftovers, but also so the 4 of us can sit down as a family for a big meal. Life is so hectic for us during the school week, and dinner is sadly, on the go. We’re going to take the time and enjoy a family night.

I roasted it immediately and used the meat of it for this week’s meals. I also made a bone stock and froze 2 (2 cup) portions of chopped meat to use later. After feasting on turkey the week after Thanksgiving too, it’s safe to say that we’re a little tired of it. Friday: Leftover.

I don’t have a recipe for nachos on the blog, but they’re so easy to make. I browned meat, using my homemade taco seasoning and layered chips, meat, cheese, chopped onions, and tomatoes on a large rimmed baking sheet. I still had chopped cooked turkey and homemade stock leftovers in the freezer from Thanksgiving.

I use rotisserie chicken, Minute® Rice, and all the fixin’s. Instead we’re all ready to tackle our schedule. In this version, I used rotisserie chicken from the store, but I’ve also used leftover turkey from Thanksgiving and leftover roasted chicken from Sunday dinner.

Being that there are only two of us in our household, we never use up bulk groceries before they go bad, making it a wasteful endeavour. There tends to be a ton of leftovers, and I suspect that many of them are wasted because they can’t eat them all. I am normally not a fan of bulk shopping at places like Costco.
