I am getting better at putting leftovers in the freezer if we don’t eat them before they go bad. Tuesday: I made a ham & pepper skillet frittata with leftover Easter ham and chopped peppers that I had in the freezer. Wednesday: I pulled leftover Cajun Sausage and Red Beans out of the freezer and served over rice.
