Eleven pounds of ham made a delicious Easter dinner with plenty of leftovers for another dinner, a breakfast casserole, and lots of ham sandwiches. How were you frugal in April? Yes, please! So easy and yummy.

Noone ate the leftover corn, so I cut it off the cob and put it in the freezer to add to our favorite, Chicken, Black Bean & Corn Tacos | Slow Cooker Recipe. I make a lot of iced tea and usually steep 2 flavored tea bags and 8 decaffeinated green tea bags in each batch I make. Homemade Roasted Tomato Sauce. Show me the money!

April 22 marks Earth Day, the one day a year that we set aside to celebrate what’s best for our planet. Use reusable containers with lids rather than plastic wrap and aluminum foil to store leftovers. Eat those leftovers! I have a good friend who hates leftovers and throws any away after a meal. That’s crazy!
