Burrito Bowls. Burrito Bowls are so easy to pull together and a great way to jazz up leftovers. I have used the leftovers to make burrito bowls (see above). Rice and Beans Stuffed Peppers make a meatless but hearty main dish. It looks like it would also make a good burrito filling.

Chicken, Pinto Beans & Rice Casserole

I had a lot of beans and rice leftover (the chicken was devoured at dinner), so I used it as a filling for burritos the next day. Bake for 20 minutes or until the rice has cooked all the way through and the liquid is absorbed. Cooked pinto beans were in my freezer, so that is what I grabbed.
