Monday: Tacos. I browned 2 lbs of turkey and used my homemade taco seasoning. My plan was to put half of the seasoned taco meat in the freezer, but the kids liked the tacos so much that ate them throughout the week for their afternoon snacks. Wednesday : Burrito Bowls –my daughters request.

Sunday: I am becoming better at putting leftovers in the freezer if we are not going to eat them in time before they go bad. Monday: Turkey Tacos. I browned 2 pounds of ground turkey, added my homemade taco seasoning , 2/3 cup water, and a can of drained and rinsed black beans. I LOVE taco night.

I browned meat, using my homemade taco seasoning and layered chips, meat, cheese, chopped onions, and tomatoes on a large rimmed baking sheet. I still had chopped cooked turkey and homemade stock leftovers in the freezer from Thanksgiving. Thursday: Leftover night from Monday and Wednesday nights dinners. I NEED YOUR HELP!

We ate leftover ham & bean soup, kielbasa, and whatever we felt like eating. Monday: Slow Cooker Chicken & Black Bean Tacos . Tuesday: I made Burrito Bowls using leftovers from Monday night. Thursday : Pork tenderloin wraps with leftovers from Wednesday night. We also had homemade applesauce.

We packed our lunch, and ate dinner with the troop at the hotel. We ate lunch and dinner on the road. Thursday: Another busy night, so I made Burrito Bowls with leftover cooked chicken and taco meat that I had in the freezer. I’ll write about the trip in a few weeks. It was a perfect ending to a perfect day.
