Last Sunday, I spent some time in the kitchen cooking up a storm: I cooked a whole chicken in the Instant Pot. The chicken made quite a bit of bone stock while it cooked and I ended up with (2) 32 oz containers of deliciousness. Ruby, “my helper”, doesn’t leave my side when I’m cooking a chicken.

I sauteed chicken tenderloins and once they were cooked through, I added a jar of store bought Alfredo sauce. This Week’s Breakfasts, Lunches, and Snacks: Breakfasts included cereal, eggs & toast.

We packed our lunch, and ate dinner with the troop at the hotel. We ate lunch and dinner on the road. I heated up cooked chicken that I had in the freezer and just added some store bought sauce. Thursday: Another busy night, so I made Burrito Bowls with leftover cooked chicken and taco meat that I had in the freezer.
