The first time I made these potatoes for my sister she was amazed, and her family gobbled up a huge pan of them. You can find the mini potatoes at most grocery stores, but we like the Potato Medley at Trader Joe’s. We’re Italian, so I’ve always used olive oil, but now we go through copious amounts of it!
