I used to menu plan sporadically. When I did this, I found that by the time I got home from work, I didn't even what to think about what to make for dinner, so we usually ended up going out or picking up something from a drive thru. Not only was this incredibly healthy (which I'm sure inevitably played a role in my weight gain), but I also don't even like to think about how much money we wasted. Menu planning takes some time to get used to, but once you get it down, it is definitely worth it! Here are some tips if you're just getting started: 1.

Menu Plan Monday: 2/1-2/7/10
totally failed to follow my menu plan for last week, so a few of the meals below are repeats. Here's what is on our menu for this week. It'll be an interesting week. Wednesday --Chicken and Broccoli Casserole, Oranges, Squash Hubs has a meeting at church this evening, so my plan is to get this meal whipped up and served before he has to leave. I'm back! And I am absolutely exhausted.

I When I know what I’m making for dinner, I don’t have to stress about choosing a meal, I can think ahead and take ingredients out of the freezer, and I can plan my grocery shopping so that I always have the necessary ingredients. Monday: Beer Battered Fish and Chips and Sweet Corn from the Freezer (Tilapia is on sale this week at Meijer for $2.99) Tuesday: Taco's Wednesday: Sweet Sloppy Joe's , peas and salad with homemade croutons Thursday: Left Over Night "I try to make this fun by rotating who gets first choose at the left overs" Friday: Homemade Pizza (Friday night tradition) Saturday: Eat out at Skyline ( Kids eat Free !) Menu Plan Monday
As much as I like to have a list/schedule/plan-of-action for things, I also like a little spontaneity. make a menu not only to make it easier for me when dinner time comes around each day, but also because by planning it out, I save a lot of money - I use what's on sale/in season, use my coupons, and I don't impulse shop. It's been months since we actually ate out. It's not always the best for our budget, but it keeps things from getting too boring and it keeps us sane. Friday night we had Pizza Hut pizza. *gasp!*

In fact, I was so busy I even forgot to make a menu plan last week! The lack of planning caused me even more stress, and we ended up eating out and eating convenience foods most nights. It was all because I didn’t have a plan. Menu These past couple of weeks I have been SO busy! Big mistake!

Today my summer vacation is officially over, and so I've spent the past couple of days hanging out with my kids and getting ready for a visit from my mother in law plus my return to work. Menu planning on a $40 budget is about to become a LOT trickier. When I am working, my kids eat breakfast and lunch at daycare. Now I am faced with the challenge of planning three meals a day for a family of 4 on $40 a week.... SUNDAY: Breakfast/lunch - vacation (on the road) Dinner - frozen pizza (DiGiorno thanks to the Kroger deals!) Menu Plan Monday: My menu for the week of 5/10
I posted a lot of information about my family and how we plan meals in this initial post. Sunday: Chicken enchiladas (we were supposed to have these yesterday, but we ended up eating out instead) Ingredients: 1 can cream of chicken soup (I use the 98% FF kind) 1 can cream of mushroom soup (I use the 98% FF kind) 2 cans green enchilada sauce 1 8 oz-16 oz. Continue stirring occasionally until the sauce is well mixed and thinned out. tub of sour cream (depends how spicy you want the enchiladas) 2-3 chicken breasts, shredded (if I'm in a hurry, I use canned chicken) 1 lb.

Happily, the husband and I get to go out to dinner all by ourselves tonight, though! We’re eating out, and we have $50 in gift cards, so I think our meal should be free.

Menu Planning Monday: My Menu for the week of 1/17 (WW points included)
Money Saving Mom is doing an "Eat from the Pantry" challenge this month. Plus, to be honest, I was a little bit worried about being able to replenish my stockpile on my limited budget if we were strictly eating from the pantry. This basically means I'll be buying groceries on $35 per week rather than $40 per week which I know isn't a huge change, but the big change is that I also cut our "eating out" budget to $50 a month. I didn't start the challenge at the beginning of the month because we were in the middle of our budget and because most of my meals consist of items that are "from the pantry" already, so I wasn't sure that I could cut my budget any more than I already have.
