Tuesday I used leftover chicken to make half of this chicken and biscuits recipe. Wednesday We had enough leftovers to make cooking unnecessary, which was handy because I had an evening lab (Where we learned all about how to insert catheters and administer enemas. Halving it worked great for just the two of us!

Preheat the oven to 400°F. Place the baking sheet on the middle rack of the oven and bake for 30 minutes or until the internal temperature reaches 135°. Turn the oven up to broil and cook for an additional 5-7 minutes or until the top is nicely browned. Remove the pork from the oven and let it rest for 15 minutes.

Here is a photo of the miniature zucchini pizzas as I put them into the oven. I baked them for 35 minutes in a preheated 400 degree oven and they were delicious! While the oven was still hot, I decided to use the remains of my low~carb feast (primarily the zucchini) to make oven-baked zucchini fries!

Mix well and pour into a greased oven-safe casserole (I use Pam). You’ll need to open another jar but leftover sauce never goes to waste in my house. Use it for pizza sauce, meatball subs or a quickie pasta later in the week. Pour some additional sauce over the top.
