I had some tomatoes that needed to be used up today, so I made a quick batch of oven roasted tomatoes. When tomatoes get too ripe, they’re not as good in salads or eaten raw because the texture changes and they can be mealy. My hubby is making bread this weekend, so I plan on using these for paninis.
