Since I’m not a baker or even much of a sweet eater, I’m a big fan of semi-homemade desserts. Pour into a freezer-safe dish, cover, and freeze until set.

I cooked the whole 20 oz package and used half for this recipe and then put the other half in the freezer for a future meal. 4 cloves garlic, minced 1 cup water 16 - 24 oz homemade chicken stock , or store-bought. Goes well with a salad, homemade applesauce and homemade bread. Top with remainder of cheese to serve.

The pesto would also go well with a round of homemade artisan bread. If you want to freeze the pesto for future use, omit the cheese and place in freezer container. It takes a lot of basil leaves to pack into 2 cups. I mixed this pesto in with some pasta and served with grilled chicken. It was a wonderful summertime meal.

I am convinced the secret to delicious homemade applesauce (or any apple dish) is to use a wide variety of apples: Ginger Gold, Stayman, Red Delicious, Golden Delicious, MacIntosh, Jonagold, Granny Smith.
