Sunday: My daughter had a very long swim meet, so we grabbed burritos at a favorite local restaurant. Monday: Chicken & black bean enchiladas and homemade sugar-free applesauce. roasted asparagus, homemade applesauce. Friday: Chicken Burrito Bowls – with a rotisserie chicken from Costco. We had a tasty week!

This Week’s Dinners: Saturday: Cheese burgers, fries, steamed broccoli, and homemade applesauce. I browned meat, using my homemade taco seasoning and layered chips, meat, cheese, chopped onions, and tomatoes on a large rimmed baking sheet. Monday: Homemade Turkey Noodle soup and garden salad. My most favorite dinner!

We ate leftover ham & bean soup, kielbasa, and whatever we felt like eating. Tuesday: I made Burrito Bowls using leftovers from Monday night. Wednesday: This was by far my favorite meal of the week: Roasted Pork Tenderloin , brussel sprouts, and homemade applesauce. We also had homemade applesauce.

Sunday: I am becoming better at putting leftovers in the freezer if we are not going to eat them in time before they go bad. I browned 2 pounds of ground turkey, added my homemade taco seasoning , 2/3 cup water, and a can of drained and rinsed black beans. Wednesday: I used leftover taco meat from Monday night to make Burrito Bowls.

It was a yummy dinner and I had leftovers for the week and the freezer. Monday: Leftover Ham & Bean Soup, salad. Thursday: Leftovers from Wednesday night. Take out the chicken.
