Am I the only one who hates cooking in the summer? The thought of heating up the kitchen by turning on the oven when it’s already over 100 degrees outside makes it really hard for me to motivate myself to cook. What We Ate Saturday My friend Mia and I cooked together; she made some fried plantains, and I made chorizo and potato tostadas, topped with cilantro, queso fresco, and Mexican crema. Tuesday I got out some leftover Christmas ham from the freezer and Zoe and I ate that with some baked apples, plus some leftover rolls.

My main goal is to mostly cook at home, and other than that, I’m not stressing for now. Next time I’d cook the chicken, put it to the side, and add it at the very last minute, once the sauce was cooked. My lunch leftovers were at least 25% better than the original dish. What did you have for dinner this week?
