I got a rotisserie chicken for $3 I was at school from 8:00-5:30 yesterday, and I knew I wasn’t going to feel like cooking after that. We ate it for dinner last night with sweet potato fries, and tonight I will make a small batch of chicken and biscuits with the leftover meat. What frugal things have you been up to lately?

What We Ate Saturday My friend Mia and I cooked together; she made some fried plantains, and I made chorizo and potato tostadas, topped with cilantro, queso fresco, and Mexican crema. Tuesday I got out some leftover Christmas ham from the freezer and Zoe and I ate that with some baked apples, plus some leftover rolls.

My main goal is to mostly cook at home, and other than that, I’m not stressing for now. Next time I’d cook the chicken, put it to the side, and add it at the very last minute, once the sauce was cooked. My lunch leftovers were at least 25% better than the original dish. Then I stirred in the cooked couscous along with some red pesto from Aldi, and topped it with the last of a bag of mozzarella from the freezer. Tuesday I sauteed some ham from the freezer, then sauteed some chopped kale, then added in leftover mac and cheese plus some milk and cream. What did you have for dinner this week?
